Sunny Sunday Salmon Salad

Half a tin of butterbeans, a big handful of watercress and/or spinach, one cooked and on pre-cooked salmon fillet, flaked. Toss with lemon and olive oil. Eat sitting in the first pool of sunshine to hit your favourite room in over three months!
