Squash and Chickpea Stew

 

Summer term started yesterday so baking is going to have to wait until the weekend.  The first week back is always super busy so I like to have lots of food ready to heat up in the fridge and freezer.  One such dish is the above squash and chickpea stew.  Nigel Slater recipe and you can find the recipe here

Nigel described it as silky.  I’d describe it as more-ish.  Either way, it’s fab.

  1. That is very, very odd. I have just been reading Nigel Slater’s chickpea and sweet potato curry from ‘The Kitchen Diaries’ and debating making it but sadly, I seem to have run out of chickpeas! I vowed to make it later in the week though – this version looks delicious too. Very moreish indeed!

  2. I keep meaning to try this one out – good to know that it’s worth making! I always have to psych myself up for a bout of squash chopping

    p.s haven’t had chance to email but thank you lots for letting me know that my cottage pie turned out well, albeit without the tarragon 🙂

    Sylvie – Forgot how tired I am in the evenings during term time. It’s crazy, isn’t it?

    Sophie – I have a super-dooper veggie peeler these days which makes light work out of even the hardest squash skins. It’s great. And it was cheap as chips too. One of the old fashioned ones, just really sharp. Ask my thumb!
