Summer term started yesterday so baking is going to have to wait until the weekend. The first week back is always super busy so I like to have lots of food ready to heat up in the fridge and freezer. One such dish is the above squash and chickpea stew. Nigel Slater recipe and you can find the recipe here.
Nigel described it as silky. I’d describe it as more-ish. Either way, it’s fab.
I had a so-so chickpea stew today, didn’t look this delicious at all!
More-ish is a great word!
That is very, very odd. I have just been reading Nigel Slater’s chickpea and sweet potato curry from ‘The Kitchen Diaries’ and debating making it but sadly, I seem to have run out of chickpeas! I vowed to make it later in the week though – this version looks delicious too. Very moreish indeed!
That looks wonderful and I know what you mean about being ‘back at school’ and the first week being busy.
I keep meaning to try this one out – good to know that it’s worth making! I always have to psych myself up for a bout of squash chopping
p.s haven’t had chance to email but thank you lots for letting me know that my cottage pie turned out well, albeit without the tarragon 🙂
Pia – Highly reccommend this one. Even D the carnivore loved it!
Rachel – Totally agree. 🙂
Antonia – Don’t remember that recipe. Will have to get Kitchen Diaries out soon.
Sylvie – Forgot how tired I am in the evenings during term time. It’s crazy, isn’t it?
Sophie – I have a super-dooper veggie peeler these days which makes light work out of even the hardest squash skins. It’s great. And it was cheap as chips too. One of the old fashioned ones, just really sharp. Ask my thumb!
Looks a wonderful dish Wendy with all those wonderful flavours it must be a winner 😀
Rosie x
The recipe looks good, but the mention of Nigel bumps it up to a much higher eichelon of good. Hope the new term goes well for you!
Looks fantastic! Thanks for the recommendation! 🙂
Chickpeas is another wonderful invention! I can eat them right out of the can! This stew looks so great!
Have a good week back at school!
Rosie – It was rather nice. 🙂
Annemarie – I trust him completely too. What does “eichlon” mean? Sorry. English teacher here. Curious!
Maninas – No probs!
Deb – Oh, me too. Can’t cook or de-tin them too early for a recipe as I eat them all!
That looks lush Wendy! I haven’t used lemongrass before, does it make a big difference to the flavour or is it quite subtle?
