Beetroot is beautiful, isn’t it? Such an incredibly vibrant colour. Shame it tastes so nasty!
Fellow beetroot haters, do no dismiss the following recipe due to its inclusion of the cloyingly sweet root vegetable. Indeed, this very sugary-ness is what makes beetroot work so well in these rich, moist and utterly decadent chocolate muffins.
Chocolate Beetroot Muffins
(makes 12)
175g caster sugar
175g plain flour
75g coco powder
2 tspn baking powder
50g dark chocolate, chopped into little pieces
50g nuts, chopped roughly
250g raw beetroot, grated finely
200ml sunflower oil
3 eggs
1 tspn vanilla essence

Sift the sugar, flour, coco powder and baking powder into a large bowl. Stir through the chocolate and nuts.

Add the sunflower oil, eggs and vanilla essence to a jug and beat together briefly.

Add the beetroot and oil mixture to the dry ingredients and mix until just combined.

Spoon into an oiled muffin tray and bake in a 180oC oven for 30 minutes.

Keep away from greedy, thieving pups who shouldn’t eat chocolate muffins but would and did given the opportunity.
Sound fabulous. I make the chocolate beetroot brownie from Red Velvet & Chocolate Heartache, and love it. Colleague once described it as random but good, but I love the edge of earthiness to the chocolate. Not to mention how lovely & moist it stays. May try them as muffins next time, just to keep them all guessing!
These look very delicious and I must try making them. Mr OC hates beetroot too, but I love it, so this is the perfect way for me to sneak some in!
I love beetroot and I’m not scared to use veg in my baking – carrots and courgettes are great cake ingredients so why not beetroot.
I’m off the sugar for a while, I was getting a bit addicted! But I’ll start eating it again in moderation and mixing it with veg sounds like a compromise!
Hmm. We’ve been meaning to try one of these recipes, now, for awhile … but have just given in and EATEN the YUMMY BEATROOTS! 🙂

I’m so glad you said that these were suitable for beetroot haters! I’m not a massive fan of it myself, but I’ve always been tempted to try the beetroot/chocolate combination. And those muffins look so moist and delicious, I think you’ve finally persuaded me!
Beetroot does NOT taste nasty – it’s the food of the Gods!!!! C’mon, I can’t be the only person in the world who adores it.

Mike – Excellent. So glad you enjoyed them. Made another batch myself today. Used dried cranberries and pistachios rather than the chopped chocolate and brazil nuts I used last time. Good but prefer the chocolate bits!

I love beetroot and that pic with the matching candle is just so lovely. This is a muffins I keep meaning to try. Actually I have been wondering what other muffins to make for Sylvia and now I think some beetroot is just what she needs before she develops any irrational hatred of the crimson critter 🙂

Just baked these muffins to sell at our Red Nose 2011 cake stall at work tomorrow. Left the nuts out just in case of allergy sufferers. Dark chocolate is oozing and they smell delicious! Just got to keep hubbies hands off them and pups 🙂
