D’s not a fussy eater but he does not like mushrooms at all and I don’t think there is a verb strong enough to express his loathing of blue cheese. I, on the other hand, love both and had an utterly divine lunch featuring both today. Can’t recommend it highly enough. Unless you are D, of course.
Preheat oven to 200 oC. Dot a field mushroom with butter and season. Cook in the oven for 15 minutes, basting occasionally. Remove mushroom from oven and top generously with blue cheese. Place back in oven for another 5 minutes until the blue cheese is oozy and bubbly. Eat in a floury bun topped with the roasting juices and large amounts of flat leafed parsley.
That is soo what I felt like today. I think it was after reading a blog about the perfect burger – that looks perfect to me!

haha! My husband is the exact same when it comes to mushrooms. Whenever he’s not around for dinner I always take advantage of the situation and make something with mushrooms: last week it was total fungus-overload: Carluccio’s porcini flavoured fettucini with mushroom sauce AND fresh mushrooms…. YUM! 😀

There’s this place in the park near us called the Shake Shack, and they do delicious old-fashioned burgers and hotdogs, but they also do a portobello mushroom burger I absolutely love. It’s raining (and snowing!) today here, so maybe I’ll stay home and make yours instead : )

Looks scrumptious to me. Sadly I seem to have developed some kind of odd intolerance to mushrooms so have had to cut them out – I’m really missing them so this photo is taunting me!!
I love my mushrooms, and lately the wife has got into them in a big way which makes me happy, but I would have to stay away from the blue cheese.

Sorry for the late comment! Great post, we love mushrooms too, sometimes it is a question of breaking down boundaries like you’ve done above… Calling it a burger often helps!
